Cut the zucchini lengthwise into thin slices. You can use a peeler or a sharp knife to cut it thin. Let the zucchini marinate for about 5 minutes in lemon juice and olive oil.
Put the zucchini on a plate and add the shredded buffalo mozzarella. Top with haricots verts, pomegranate, jalapeno, fresh basil and lemon zest.
